Thimbles with Mushrooms and Artichokes

Cook Time: 20 min
Level: Easy
Yield: 4 to 6 servings


Ingredients

* 3 tablespoons olive oil 1 small onion, finely chopped
* 1 pound mushrooms, trimmed, cleaned and finely chopped
* 1 teaspoon kosher salt, plus 3/4 teaspoon
* 1 cup dry Marsala wine
* 1 pound thimble pasta
* 1/2 pound frozen artichoke hearts, thawed
* 3/4 cup grated Parmesan
* 1/2 cup cream
* 1/2 cup chopped fresh flat-leaf parsley
* 1 teaspoon freshly ground black pepper


Directions

Place the olive oil in a large, heavy skillet over medium-high heat.
Add the onions and cook for 1 minute. Add the mushrooms and 1 teaspoon
of the salt. Saute, stirring occasionally, until all the moisture has
evaporated and the mushrooms have cooked down, about 10 minutes. Add
the Marsala and continue cooking until almost all the wine has
evaporated, about 5 minutes.


Meanwhile, bring a large pot of water to a boil over high heat. Stir
in remaining salt. Add the pasta and cook until tender but still firm
to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta
and add it into the mushrooms, Marsala and onions Add the artichoke
hearts, Parmesan and cream and cook until the artichokes are heated
through, about 5 minutes. Stir in the parsley and pepper. Transfer to
a serving bowl and serve.

Pasta with Tomato and Peas

Cook Time: 15 min
Level: Easy
Yield: 6 servings


Ingredients


* 1 pound linguine
* 3 tablespoons extra-virgin olive oil
* 3 shallots, chopped
* 2 garlic cloves, minced
* 1 carrot, diced
* 1 teaspoon salt
* 1 teaspoon freshly ground black pepper
* 5 tablespoons tomato paste
* 1/2 teaspoon dried oregano
* 1 teaspoon dried thyme
* 1 teaspoon dried parsley
* 1 1/2 cups frozen peas, thawed
* 1/4 cup grated Parmesan
* 1/4 cup grated Romano


Directions


Bring a large pot of salted water to a boil over high heat. Add the
pasta and cook until tender but still firm to the bite, stirring
occasionally, about 8 to 10 minutes. Drain the pasta, reserving 2 cups
of the pasta water.


Meanwhile, heat the oil in a large nonstick frying pan over medium
heat. Add the shallots, garlic, carrots, salt, and pepper. Cook until
tender, about 8 minutes. Add the tomato paste and 1/2 cup of the hot
pasta water. Stir to melt the tomato paste and create a sauce, adding
more pasta water if necessary. Stir in the oregano, thyme, and
parsley. Gently fold in the cooked pasta, peas, and the cheeses,
adding more reserved pasta water if necessary. Transfer to a platter
and serve immediately.

Tomatoes Stuffed with Rice

Cook Time: 30 min
Level: Intermediate
Yield: 4 servings


Ingredients

* 1 cup Arborio rice (or other short-grain white rice)
* 6 ripe but firm large tomatoes
* 4 tablespoons olive oil, plus extra for drizzling
* Salt and freshly ground black pepper
* 1 garlic clove, minced
* 3 tablespoons chopped fresh basil leaves
* 2 tablespoons chopped fresh Italian parsley leaves
* 1/4 cup grated Parmesan


Directions

Cook the rice in a medium saucepan of boiling salted water, stirring
periodically, until just cooked through, about 10 minutes. Drain.
Rinse the rice under cold running water. Set the rice aside.


Preheat the oven to 350 degrees F.


Cut a 1/2-inch thick slice off the top of each tomato; reserve the
tomato tops. Cut and scoop the seeds, pulp, and juice from each tomato
into a small bowl. Reserve 1/4 cup of the tomato juice and pulp.


Oil the bottom of an 8 by 8-inch baking dish with 2 tablespoons of the
olive oil. Place the hollowed tomatoes in the prepared dish.


Toss the rice with the reserved tomato juice and pulp. Add garlic,
basil, parsley, Parmesan, the remaining 2 tablespoons of olive oil,
and salt and pepper, to taste. Combine well.


Spoon the rice mixture into the hollowed tomatoes, mounding slightly.
Sprinkle leftover stuffing on the bottom of the pan. Drizzle entire
dish with olive oil. Place the reserved tomato slices atop the
tomatoes. Bake until the rice is heated through, about 20 minutes.
Serve hot or at room temperature.

Orecchiette with Toasted Breadcrumbs

Cook Time: 15 min
Level: Easy
Yield: 4 servings


Ingredients

* 1 pound dried orecchiette or other small shaped pasta
* 3/4 cup extra-virgin olive oil
* 2/3 cup Italian seasoned dried bread crumbs
* Sea salt and freshly ground black pepper
* 1/4 cup grated Parmesan
* 1 cup finely chopped prosciutto
* 2 tablespoons chopped fresh parsley leaves


Directions

In a large pot, bring to a boil 6 quarts of salted water. Cook pasta
until al dente, about 8 minutes.


Meanwhile, in a medium-sized saute pan, heat the oil until warm. Since
the bread crumbs will cook quickly, you don't want to add them into a
hot pan, otherwise they can burn. Add the breadcrumbs and stir
constantly. Season lightly with salt and pepper since flavored bread
crumbs may already have seasoning. Saute for about 2 minutes. Remove
from heat and set aside.


Drain pasta in a colander. Working quickly, add pasta to the saute pan
and stir to combine. Add Parmesan and the chopped prosciutto. Mix
thoroughly. Pour into large serving bowl and garnish with chopped
parsley.

Goat Cheese and Herb Stuffed Radicchio Leaves

Cook Time: 5 min
Level: Intermediate
Yield: 12 stuffed radicchio leaves

Ingredients

* 1 cup olive oil
* 3 cloves garlic, minced
* 1/4 cup chopped fresh flat-leaf parsley
* 1/4 cup chopped fresh basil leaves
* 1 teaspoon dried thyme
* 3 scallions, finely chopped
* 1/2 teaspoon kosher salt
* 1/4 teaspoon freshly ground black pepper
* 11 ounces goat cheese, frozen for 15 minutes and sliced into 12
(1/2-inch) pieces
* 12 radicchio leaves, cleaned


Directions

Special Equipment: a deep-fry thermometer


In a small saucepan, heat the olive oil over medium heat until a
deep-fry thermometer registers 300 degrees F. Remove from heat and
allow to cool for 5 minutes.


Combine the garlic, parsley, basil, thyme, and scallions in a small,
heat-resistant glass bowl. Carefully pour the warm oil over the herb
mixture, Add the salt and pepper. Mix well.


Spoon a thin layer of the herb mixture on the bottom of an 8 by 8-inch
square glass baking dish. Arrange the goat cheese slices in a single
layer on top. Spoon the remaining herb mixture evenly over the top of
the goat cheese. Cover the baking dish with plastic wrap and
refrigerate for at least 4 hours or overnight.


To serve: Place the radicchio leaves on a serving platter, carefully
place a slice of marinated goat cheese in each leaf. Drizzle with
additional herb mixture and serve.

Cheese Tortellini in Light Broth

Cook Time: 20 min
Level: Easy
Yield: 8 servings


Ingredients

* 8 cups low-salt chicken broth
* Freshly ground black pepper
* 2 (9-ounce) packages refrigerated cheese tortellini
* 2 tablespoons chopped fresh Italian parsley leaves


Directions

Pour the broth into a heavy large saucepan. Cover and bring to a boil
over high heat. Season the broth with pepper, to taste. Add the
tortellini. Simmer over medium heat until al dente, about 7 minutes.


Ladle the broth and tortellini into soup bowls. Top with parsley and
Parmesan crisps and serve.


Parmesan Crisps:

Yield: 8 to 10 crisps


1/2 cup grated Parmesan


Preheat oven to 400 degrees F.


Pour a heaping tablespoon of Parmesan onto a silicone or parchment
lined baking sheet and lightly pat down. A silicone baking sheet is
highly recommended. Repeat with the remaining cheese, spacing the
spoonfuls about a 1/2 inch apart.


Bake for 3 to 5 minutes or until golden and crisp. Cool.

Penne with Beef and Arugula

Prep Time: 30 minutes
Cook Time: 15 minutes
Yield: 6 to 8 servings

1 (1-pound) New York strip steak
1 teaspoon herbs de Provence
1 garlic clove, minced
3/4 cup extra-virgin olive oil, plus 3 tablespoons
1 pound penne pasta
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
1/2 teaspoon salt, plus more for steak and pasta water
1/2 teaspoon freshly ground black pepper, plus more for steak
1/4 cup chopped fresh basil leaves
1/4 cup chopped fresh parsley leaves
2 cups chopped arugula


Season the steak with salt and freshly ground black pepper, herbs de
Provence, and minced garlic. In a skillet, heat 3 tablespoons olive
oil over medium heat. Cook steak about 7 minutes per side. Remove the
meat from pan and let it rest for 5 minutes. Thinly slice the steak.
Set aside.


Meanwhile, bring a large pot of salted water to a boil over high heat.
Add the pasta and cook until tender but still firm to the bite,
stirring occasionally, about 8 to 10 minutes. Drain pasta, reserving
1/4 cup of pasta water.


In a small bowl, whisk together the balsamic vinegar, Dijon mustard,
1/2 teaspoon salt, 1/2 teaspoon pepper, fresh herbs, and 3/4 cup olive
oil. In a large bowl toss the pasta with half of the salad dressing
and the reserved pasta water. Add the arugula and steak, more
dressing, and season with salt and freshly ground black pepper, as
needed. Toss, pack for the picnic, or serve.

Sea Bass alla Fiorentina



Prep Time:
10 minutes
Cook Time: 20 minutes
Yield: 4 servings

4 (6-ounce) pieces sea bass
1/4 teaspoon salt, plus more for seasoning fish
1/2 teaspoon freshly ground black pepper, plus more for seasoning fish
2 cups all-purpose flour
3 tablespoons extra-virgin olive oil, plus 3 tablespoons
3 garlic cloves, chopped
1 (14-ounce) can crushed tomatoes
1/2 cup water
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh basil leaves
Season both sides of the fish with salt and pepper. Put the flour in a shallow bowl, dredge the fish, tapping off the excess flour to create a light coating.

In a medium nonstick fry pan, heat the 3 tablespoons olive oil over medium heat. Cook the fish until golden brown, about 3 minutes per side. Transfer fish to a plate.

Wipe out the pan with a paper towel and heat the remaining 3 tablespoons olive oil over medium heat. Add the garlic, tomatoes, water, parsley, 1/4 teaspoon salt, and 1/2 teaspoon pepper and cook at a simmer for 10 minutes. Add the basil and the fish and heat for 2 minutes. Serve immediately.

Dirty Risotto


Ingredients

5 cups reduced-sodium chicken broth
2 tablespoons butter
2 ounces pancetta, chopped
1 link (about 6 ounces) spicy Italian sausage, casing removed
3/4 cup finely chopped onion
1 cup chopped red bell pepper
4 ounces button mushrooms, coarsely chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/2 cups Arborio rice or medium-grain white rice
3/4 cup dry white wine
1/2 cup freshly grated Parmesan
1 tablespoon chopped fresh Italian parsley leaves



Directions

In a medium saucepan, bring the broth to a simmer. Cover the broth and keep warm over low heat.

In a large heavy saucepan, melt the butter over medium heat. Add the pancetta and sausage and saute until golden brown, about 5 minutes.


Add the onion, bell pepper, and mushrooms and saute until tender, scraping up the browned bits on the bottom of the pan, about 8 minutes. Season with salt and pepper.


Add the rice and stir to coat. Add the wine and simmer until the wine has almost completely evaporated, about 1 minute. Add 1/2 cup of simmering broth and stir until almost completely absorbed, about 2 minutes.


Continue cooking the rice, adding the broth 1/2 cup at a time, stirring constantly and allowing each addition of broth to absorb before adding the next, until the rice is tender but still firm to the bite and the mixture is creamy, about 25 to 30 minutes total. Remove from the heat.


Stir in 3/4 of the Parmesan. Transfer the risotto to a serving bowl. Sprinkle with the parsley and remaining Parmesan and serve immediately.
