Caprese Salad (Tomato, Mozzarella, Basil Salad)
1/2 lemon, juiced
Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
5 Roma tomatoes, sliced
1 1/4 pounds fresh mozzarella, sliced
1 bunch fresh basil leaves, stemmed
Whisk lemon, salt, pepper and olive oil together.
Pour vinaigrette over tomato, mozzarella, basil.
You could also use this as a no-cook pasta sauce, just cut the mozzarella and tomatoes a little bit smaller :)
